On a hot summer day I had the opportunity to visit the Highwayman Distillery in Byron Bay, where Dan Woolley handcrafts incredibly unique, small-batch Australian single malt whisky. We enjoyed a tour of the craft distillery, a masterclass tasting, the chance to try newmake as it came directly out of the still, and a warm welcome from Louie the Bluey (the distillery dog, an Australian Blue Heeler).

Dan has a wealth of whisky knowledge and it was a real treat to hear how much of that experience goes into every drop. This tour was arranged with Dan Woolley through the Queensland Malt Whisky Society as an exclusive member’s tour.
